The Secret Life of Lou: Mom’s Seafood Chowda!

Hi anipals! It’s a new year, and in many parts of the world, it means dat it’s cooooold outside! I’m an indoor kitty, but I know it’s cold out because I feel it as Mom transports me back & forth to da Office.
Anyway, recently I was a very good kitty or something, because Mom made us seafood chowda! Now chowda is a New England dish, which makes sense because I am a New England kitty.

This also means that it’s got all sorts of fishies and seafood and things that kitties like me like a whole lot; I’ve been sharing seafood & fishes wif Mom since I was old enough to eat them!

So, I put on my most innocent face and I asked suckermom, er, Human Mom, if she would share the recipe with me so I could share it wif my anipals, and she relented ’cause she is a suckermom and all.
So here you go, anipals..Mom’s Chowda!

You will need:

Crock Pot
1 lb each scallops, shrimp, tilapia (frozen is fine)
1 can crab (in the canned tuna aisle)
1 lb frozen lobster chunks if you feel like it

several large potatoes, peeled/cooked/mashed

1 pint cream
1 qt milk

1/2 med. onion, chopped fine and cooked until translucent
3 strips bacon, cooked semi-crisp
minced garlic to taste

old bay seasoning to taste (Mom suggests the blackening seasoning for slightly smoky flavor)

salt, pepper, white pepper to taste

any other seasoning you like; Mom won’t be offended

set the low heat on your crock pot, pour in your milk products while the bacon & potatoes are cooking. Add seasonings to taste. once bacon is cooked and drained, crumble the bacon & add it to the pot. In the bacon drippings, cook, the garlic and onion until onion bits are translucent and garlic is slightly browned; add to the pot.

Once the potatoes are peeled, cooked, and very lightly mashed (crumbled, really) add them to the pot. Chowda will appear to be thin at this stage, give it time to cook & thicken.

Add the fish & seafood. Allow to cook until chowda is hot, and fish/seafood is cooked through, and chowda is thick. If chowda is too thick, thin it with milk. If chowda is too thin, thicken it with a roux and allow it to cook for awhile.

My name & I are Irish.  True to my roots, I can pull a story out of memory that leaves you thinking, or laughing your butt off Handy on long car trips, and blog posts.

In addition to owning Live Love Meow, I have a photography hobby.  All the pictures you see on my site, my profiles, etc chances are excellent that I took them myself.  

Among my favorite things, besides my camera, are a collection of Leatherman multipurpose tools (I have 3 of them) and Roomba vacuum cleaners. 

My not-so-secret confession: I may look rough and tumble and always up for adventure, but I’m actually a softie.

Lou is a Korat mix who showed up in my life as a 4.5 week old stray.  All I knew about Lou when I met him, was that he was too little to be away from his mom; he was cold, hungry, and dehydrated.  All he knew about me was that I was warm and held him gently.   Before Lou had a name, I  had tucked him into my shirt and started stroking his head while figuring out what and how to feed him.  It was love for both of us, at first purr.  Within the hour he was eating (like a piglet!) from a spoon and drinking on his own, in between snuggles.

Lou and I became practically inseparable.  I am his, and he is mine.  That’s all there is to it.

Continuing to give something back on my ‘Share It Sunday’. We all share and we grow together.  Pop over say hello and make a new friend.

  17. SHE's going to write that recipe down. SHE loves clam chowda but they don't have clams in Oz--certainly not in the middle of NSW where we live. Anyway, SHE's always looking for substitute recipes.
